How To Make Memaw’s Chicken Fried Steak and Gravy Recipe

Welcome to ASA Cooking BD. This one has been in my family for at least 60 years created by my now 94 year old great grandma. it’s simple but delicious and tastes like my childhood to me. Full disclosure measurements in my family are made with the heart not the measuring cup so we’re estimating here.

Necessary Ingredients:

A 4 pack of cube steak 1/2 tsp seasoned salt (we use Lawry’s) 1/2 tsp Salt 1/2 tsp Pepper 1/2 tsp Garlic powder 1/2 tsp Onion powder 1/2 tsp Chili powder 1/2 tsp Cayenne pepper (not necessary but nice if you like some spice, of every ingredient in here though overdoing it on this can absolutely overpower the flavor)

Each of the spice amounts will be used twice so technically double that… writing recipes isn’t my forte

2 cups Milk One full egg 2/3 cup White flour (using more isn’t bad, this will be used afterwards for the gravy so you just don’t want to have none left over) 1 cup? Coconut oil*

*really depends on pan size but you want about half an inch of melted oil while ASA cooking BD

1.) Dump the flour and all the spices onto a plate and mix them up.

2.) In a bowl mix the same ratio of spices with the milk and egg and whisk it until the egg is blended in.

3.) put the coconut oil in a medium cast iron pan and set to med high heat (like 7 if you have a numbered dial)

4.) dip the cubed steak first into the flour fully coating it, then the milk, then back into the flour and repeat with the rest of the steaks And set them aside

In all likelihood you’ll have some flour goop on your fingers by the time you’re done, you can use it to text the heat of the oil, just drop the goop in. It should be hot enough to pop and bubble a bit but shouldn’t be smoking or making too much noise. If it’s too high it’ll dry the steak out quickly.

5.) Place the steaks into the oil, 2 is normally as many as can fit without bothering each other

6.) Cook for 3-5 minutes before flipping, the breading should be a light brown with some slight darker spots starting to show.

7.) flip and cook another 2-4 minutes, keeping an eye on the color. If it gets darker than an average paper bag it’s time to take them out.

Once they’re cooked mix the flour and milk together and cook in a saucepan on low stirring constantly until you can drag your spoon and a “tail” shows behind it. If it thins too much just add some more milk

Serve with some mashed potatoes and collared greens and if you see my great grandma tell her thanks

Edit: didn’t realize it looked like I said to dip into the flour 3 times and the egg twice, while you can do that it makes the breading too thick for my taste
